Cookie’s Chocolate Chip Cookies with Pecans*
Ingredients
1 cup white sugar
1 cup brown sugar (packed)
2/3 cup unsalted butter, softened (not melted)
2/3 cup Crisco
2 large eggs
1 teaspoon vanilla
3 cups unbleached flour (not whole wheat)
1 teaspoon baking soda
1/2 teaspoon salt
3/4 to 1 cup chopped pecans (make sure they are fresh—nothing wrecks a cookie like bad nuts)
1 package (12 ounces) semisweet chocolate chips
Directions
Heat oven to 375*.
With hand or stand mixer beat sugars, butter, and Crisco until creamed. Add eggs and vanilla, beat.
Mix baking soda and salt with one cup of flour and mix into wet ingredients. Add the remaining two cups flour and mix well. The dough will be very thick. With a large spoon stir in nuts and chocolate chips.
Bake immediately or store covered dough in fridge not more than two days.
Drop by rounded teaspoonfuls or medium cookie scoop about 2 inches apart on un-greased cookie sheets. Bake 8 to 10 minutes, or until browned. Cool slightly before transferring cookies to cooling racks. (Hint: if your cookie sheets are dark, bake cookies on a high rack in oven and only one pan at a time. This gives the tops of the cookies a chance to bake before the bottoms burn.)
*This batch is big enough for the whole Platoon. If not feeding a crowd of hungry history majors consider cutting recipe in half. These cookies are best when they are fresh.
